Banana Baking Round Up

It’s been a long time since I’ve baked.  Cooked? Sure, almost on the daily. But baking, probably not since Christmas (scones and brownies don’t count).  There’s not a ton of time in my hustle to bake especially now that it’s summer and it feels like we’ve had something every Saturday or Sunday for the last month.

Today all of that changes!  We get bananas delivered to the office every week and this week with it being short because of the holiday we had a surplus of really ripe bananas that needed to be transformed.  Friday morning our man of all trades at the office, lovingly nicknamed ‘Uncle Dave,’ packed up a box of these ripe ‘nanas and had them on my desk. Our office smelled like bananas all day and I’ve been thinking about what to make with them ever since. 

This morning we had banana pancakes. Nothing exciting to share recipe wise, I just use the box mix and add a mashed banana.  Semi-homemade right? Not bad for 7:30a on a Saturday. Now that J is down I’ve started scavenging my saved recipes and wanted to share in case you too end up with bananas that are ripe for the baking.
